Summer Fruit Crisp

Celebrating July 4th with a Refreshing Summer Fruit Crisp

As the summer sun is in full swing and July 4th approaches, there’s no better way to celebrate than with a delightful Summer Fruit Crisp. This easy-to-make dessert captures the essence of the season with juicy nectarines and vibrant blueberries, complemented by a crispy oat topping that’s both comforting and irresistibly delicious.

4 white nectarines, ripe yet firm

1 cup fresh blueberries

2 teaspoons ground cinnamon (divided), with 1 teaspoon reserved for the oat mix topping

1 teaspoon lemon juice

¾ cup oats (old-fashioned or quick oats)

¼ cup brown sugar

2 tablespoons cold butter

Preheat and Prep: Start by preheating your oven to 375°F (190°C). Meanwhile, prepare your baking dish by greasing it lightly to prevent sticking.

Prepare the Fruit: Slice the nectarines into thin, even slices. The skin of white nectarines adds a beautiful color and texture to the dish.

Combine Fruit and Flavors: In a mixing bowl, gently combine the sliced nectarines and blueberries. Add the lemon juice and half of the ground cinnamon (1 teaspoon), tossing the fruit until evenly coated. The lemon juice adds a touch of brightness while cinnamon provides a warm, aromatic depth to the fruit mixture.

Create the Crispy Topping: In another bowl, prepare the oat mix topping. Combine the oats, brown sugar, and the remaining teaspoon of ground cinnamon. Cut the cold butter into small pieces and add it to the oat mixture. Use a fork or pastry cutter to blend the butter into the dry ingredients until the mixture becomes crumbly and resembles coarse meal.

Assemble and Bake: Transfer the prepared fruit mixture into the greased baking dish, spreading it out evenly. Sprinkle the oat mixture evenly over the top of the fruit, covering it completely with a generous layer of the crispy topping.

Bake to Perfection: Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until the fruit is bubbling and the oat topping is golden brown and crispy. The aroma of baked fruit and cinnamon will fill your kitchen, signaling that your Summer Fruit Crisp is almost ready to enjoy.

Serve and Enjoy: Once baked to perfection, remove the crisp from the oven and allow it to cool slightly. Serve warm, either on its own or with a scoop of vanilla ice cream or a dollop of whipped cream
