Spiced Beef & Noodle Stir-Fry

Ingredients 

Broccoli: Start with a large head of broccoli. Broccoli not only adds substance to the stir-fry but also provides a wealth of vitamins and fiber.

Zucchini: Zucchini’s mild, slightly sweet flavor pairs harmoniously with the other ingredients.

Onion: Choose a yellow or white onion for its sweeter flavor profile. When sautéed the onions develop a caramelized richness.

Ground Beef: Ground beef serves as the main protein source in this dish.

Rice Noodles: These noodles offer a light and delicate texture that effortlessly absorbs the flavors of the stir-fry.

Soy Sauce: Soy sauce not only seasons the dish but also adds depth and complexity to the overall taste profile.

Green Hot Sauce: Explore different varieties of green hot sauce to find one that suits your taste preferences. I used Trader Joe’s.

Honey: Honey adds a touch of natural sweetness that balances out the spiciness of the hot sauce.

Instructions 

Preparation: Begin by preparing your ingredients. Wash and chop the broccoli, zucchini and the onion into bite side pieces. Set aside.

Sauté Vegetables: Heat a skillet over medium heat and add the chopped broccoli, zucchini, and onion. Sauté the vegetables until they begin to soften and caramelize. This step adds depth and texture to the stir-fry.

Cook Ground Beef: In the same skillet or a separate pan, cook the ground beef until it’s browned and cooked through. 

Prepare Sauce: While the beef is cooking, prepare the sauce by combining soy sauce, green hot sauce, and honey in a small bowl. Adjust the quantities of hot sauce and honey to suit your desired level of spiciness and sweetness.

Cook Rice Noodles: Cook the rice noodles according to the package instructions until they’re tender. Drain the noodles and set them aside.

Combine Ingredients: Once the beef is cooked, add the vegetables to the skillet with the beef. Stir to combine, allowing the flavors to meld together.

Add Sauce: Pour the prepared sauce over the cooked vegetables and beef, ensuring that every ingredient is evenly coated in the flavorful mixture. Stir gently to incorporate the sauce into the stir-fry.

Incorporate Noodles: Finally, add the cooked rice noodles to the skillet, tossing them with the other ingredients until they’re fully coated in the sauce and heated through.

Ingredients

  • 1 large head of broccoli, chopped

  • 2 medium zucchini, chopped

  • 1 yellow or white onion, chopped

  • 1 lb ground beef

  • 1 package of rice noodles

  • 1/4 cup soy sauce

  • 2 tsp green hot sauce

  • 1 tbsp honey – optional hot honey for more spice

Directions

  • Heat a skillet over medium heat
  • Add broccoli, zucchini and onion
  • When onion begins to brown, remove from heat and set aside
  • Cook beef on stove top
  • While beef is cooking, combine soy sauce, hot sauce and honey in a bowl
  • Cook rice pasta according to package instructions, drain and set aside
  • Once beef is cooked, stir in sautéd vegetables
  • Pour sauce over cooked vegetables and beef
  • Stir in rice noodles
  • Combine all ingredients
  • Serve warm and enjoy!
