Pizza Casserole with Biscuits

Today I am sharing one of my favorite recipes: Pizza Casserole with Biscuits! It’s a brilliant fusion of two kitchen classics, pizza and casserole, offering a unique twist on familiar flavors. Ingredients

2 bags of Trader Joe’s riced cauliflower: These convenient bags of riced cauliflower add a boost of color while contributing a light and fluffy texture.

1 lb lean ground beef: This protein source provides the base for the casserole, offering a satisfying texture along with a rich flavor that complements the other ingredients perfectly.

1/4 lb ground spicy chicken sausage: Adding a kick of flavor, the spicy chicken sausage infuses the dish with a zesty taste, adding depth to the overall flavor profile.

1 cup diced white or yellow onion: Diced onions bring a subtle sweetness and aromatic flavor to the casserole, enhancing its savory taste.

4 large tomatoes: Fresh tomatoes add a burst of juiciness and vibrant color to the casserole, contributing to its overall freshness.

10 oz or about 1 cup of pizza or tomato sauce: The pizza or tomato sauce serves as the flavorful base of the casserole, lending it a rich and tangy taste that ties all the ingredients together.

1 tube of biscuits: These flaky and buttery biscuits serve as the ‘pizza crust’ for the casserole,

1/2 cup of blended cheese: The blended cheese, with its melty texture, adds a creamy richness to the casserole while offering a delightful contrast to the other ingredients.

1 tsp minced garlic: Minced garlic brings a bold and aromatic flavor to the casserole, infusing it with a deliciously savory taste that enhances the overall depth of flavor.

1 tsp avocado oil: Avocado oil used in combination with riced cauliflower.

Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large casserole dish, toss the riced cauliflower with avocado oil, salt, and pepper to taste.

3. Bake in the preheated oven for about 20 minutes while you prepare the other ingredients.

4. In a skillet, cook the ground beef and spicy chicken sausage until browned. Season the meat with minced garlic and oregano.

5. While the meat is cooking, dice the onion and tomato, and quarter the uncooked biscuits.

6. Once the cauliflower is lightly cooked, remove the casserole dish from the oven and add the cooked meat, pizza sauce, diced onion, and diced tomato. Stir to combine.

7. Gently press the quartered biscuits into the mixture, and sprinkle the top with blended cheese.

8. Return the casserole dish to the oven and bake for an additional 50 minutes, or until the biscuits are golden brown and cooked through.

9. Remove from the oven and let it cool for a few minutes before serving warm. Enjoy your delicious pizza casserole!

Ingredients

  • X2 bags of trader joes frozen riced cauliflower about 6 cups

  • 1 lb lean ground beef

  • 1/4 lb ground spicy chicken sausage

  • 1 cup diced white or yellow onion

  • 3 large tomatoes

  • 10 oz or about 1 cup of pizza or tomato sauce

  • 1 tube of biscuits

  • 1/2 cup of blended cheese

  • 1 tsp minced garlic

  • 1 tsp avocado oil

  • Salt

  • Pepper

  • Oregano

Directions

  • Preheat oven to 375
  • In a large casserole dish, combine avocado oil and riced cauliflower, add salt, pepper as desired
  • Place in oven to cook while preparing other ingredients (about 20 min)
  • Cook ground beef and ground chicken sausage in a skillet
  • Season with minced garlic and oregano
  • While meat is browning, dice onion, tomato and uncooked biscuits
  • Remove casserole dish from oven and combine cooked beef, pizza sauce, chopped onion, chopped tomato. Contents of the dish will be warm. Add chopped biscuits and top with cheese
  • Place in oven for 50 minutes
  • Remove from oven and serve warm
