One Skillet Taco Bowl

This taco in a bowl recipe is a weeknight favorite in our house! The shortcuts I use are purchasing my garlic minced and onions diced. It takes down my meal prep time and with the limited time I have on weeknights, I need all the extra time I can get. This recipe is delicious, but because it is cooked all in one skillet, clean up is minimal.

  • Minced Garlic: Garlic adds a wonderful depth of flavor to the dish. I use pre minced garlic to cut down on time!
  • Yellow Onion: Diced yellow onions bring a sweet and savory element to the dish. As they cook, they soften and caramelize, enhancing the overall flavor profile of the taco bowl.
  • Ground Chicken: Lean ground chicken serves as the protein base for this dish. You can sub for any ground protein you prefer.
  • Rice: Rice acts as the hearty foundation of the taco bowl, soaking up all the delicious flavors from the other ingredients. Opt for your favorite variety – whether it’s white or brown.
  • Chicken Stock: Chicken stock adds richness and depth to the dish, infusing the rice with savory flavor as it cooks. You can use store-bought stock or homemade.
  • Black Beans: These protein-packed legumes add a creamy texture and earthy flavor to the taco bowl. Make sure to drain and rinse them before adding.
  • Hatch Green Chilis: These mild green chilis provide a subtle hint of heat and a pop of color to the dish. If you can’t find fresh chilis, canned or jarred varieties work just as well.
  • Tomatoes: Fresh diced tomatoes add brightness and acidity to the taco bowl, balancing out the richer flavors of the meat and beans. Look for ripe, juicy tomatoes for the best flavor.
  • Taco Seasoning: This pre-made taco seasoning blend is a convenient way to add flavor to the dish. It typically includes a combination of spices like chili powder, cumin, paprika, and garlic powder. I like to use Siete brand.
  • Shredded Cheese: A sprinkle of shredded cheese on top adds a creamy and indulgent finish to the taco bowl. Cheddar, Monterey Jack, or any blend of cheese all work well here.

1. Prepare Your Ingredients: Before diving into cooking, make sure to have all your ingredients measured and ready to go. This will streamline the cooking process and ensure that everything comes together smoothly.

2. Heat Up Your Skillet: Start by heating a small amount of avocado oil in a skillet over medium heat. Once the oil is hot, add in the minced garlic and diced onion, stirring occasionally.

3. Cook the Ground Chicken: Next, add the ground chicken to the skillet, break it apart with a spatula as it cooks. Cook the chicken until it is thoroughly cooked through and no longer pink.

4. Season It Up: Once the turkey is cooked, sprinkle in the packet of Siete taco seasoning. The seasoning infuses the dish with that irresistible taco flavor we all know and love.

5. Add Rice and Chicken Stock: Now it’s time to add in the uncooked rice and chicken stock to the skillet. Stir everything together.

6. Simmer and Absorb: Cover the skillet and let the mixture simmer for about 15 minutes, stir it occasionally to prevent sticking. Keep an eye on it until the liquid is absorbed and the rice is tender.

7. Final Touches: Once the rice is cooked, stir in the black beans, green chilis, and diced tomatoes. Let everything cook together for an additional 3-5 minutes, allowing the flavors to meld and mingle.

8. Cheese: Before serving, sprinkle the shredded cheese over the top of the taco bowl. The cheese will melt slightly, adding a creamy and indulgent finish to the dish.

9. Optional Toppings: Here’s where you can get creative! Feel free to top your taco bowl with your favorite salsa or guacamole for an extra burst of flavor and freshness.

10. Serve and Enjoy: Your One Skillet Taco Bowl is now ready to be devoured. Dish it up into bowls, grab a fork (or a spoon – no judgment here), and dig in!
