One Skillet Taco Bowl

This taco in a bowl recipe is a weeknight favorite in our house! The shortcuts I use are purchasing my garlic minced and onions diced. It takes down my meal prep time and with the limited time I have on weeknights, I need all the extra time I can get. This recipe is delicious, but because it is cooked all in one skillet, clean up is minimal.

Ingredients

  • Minced Garlic: Garlic adds a wonderful depth of flavor to the dish. I use pre minced garlic to cut down on time!
  • Yellow Onion: Diced yellow onions bring a sweet and savory element to the dish. As they cook, they soften and caramelize, enhancing the overall flavor profile of the taco bowl.
  • Ground Chicken: Lean ground chicken serves as the protein base for this dish. You can sub for any ground protein you prefer.
  • Rice: Rice acts as the hearty foundation of the taco bowl, soaking up all the delicious flavors from the other ingredients. Opt for your favorite variety – whether it’s white or brown.
  • Chicken Stock: Chicken stock adds richness and depth to the dish, infusing the rice with savory flavor as it cooks. You can use store-bought stock or homemade.
  • Black Beans: These protein-packed legumes add a creamy texture and earthy flavor to the taco bowl. Make sure to drain and rinse them before adding.

4. Season It Up: Once the turkey is cooked, sprinkle in the packet of Siete taco seasoning. The seasoning infuses the dish with that irresistible taco flavor we all know and love.

5. Add Rice and Chicken Stock: Now it’s time to add in the uncooked rice and chicken stock to the skillet. Stir everything together.

6. Simmer and Absorb: Cover the skillet and let the mixture simmer for about 15 minutes, stir it occasionally to prevent sticking. Keep an eye on it until the liquid is absorbed and the rice is tender.

Ingredients

  • 1 tablespoon minced garlic

  • 1 medium yellow onion, diced (about 1 cup)

  • 1 package ground turkey

  • 1 cup rice

  • 2 cups chicken stock

  • 1 can black beans, drained and rinsed

  • 1 can Hatch green chilis

  • 3 large tomatoes, diced

  • 1 packet of taco seasoning

  • 1/2 cup shredded cheese

  • Optional: favorite salsa or guacamole for topping

Directions

  • Heat small amount of avocado oil in a skillet over medium heat
  • Add garlic and onion and stir
  • Add ground chicken and cook throughly
  • Add taco seasoning and stir
  • Add uncooked rice and chicken broth and stir together
  • Cover and let simmer for 15 minutes, stirring occasionally until liquid is absorbed
  • Add in black beans, green chili and tomato, stir and cook for an additional 3-5 minutes
  • Top with shredded cheese
  • Optional: add favorite salsa or guacamole
  • Serve warm and enjoy!
