Citrus Glazed Chicken

We are sharing our Citrus Glazed Chicken recipe, a flavorful dish featuring fresh ingredients like ground chicken, zucchini, red bell peppers, garlic, and ginger. This recipe combines the savory flavors of soy sauce and honey with the tanginess of freshly squeezed orange and lemon juices, creating a delicious glaze. Served over rice, it makes a well-rounded performance plate with protein, color, and carbs!

Ingredients

Ground Chicken (1 lb): Ground chicken serves as the protein base for this dish. 

Zucchini (3 medium): Zucchini adds a mild flavor and a pleasant texture to the dish.

Red Bell Peppers (2): Red bell peppers contribute vibrant color, sweetness, and a crisp texture. They are packed with vitamin C and antioxidants.

White Onion (1): White onion provides a savory depth of flavor to the dish when cooked. 

Garlic (1 clove, minced): Garlic infuses the dish with a robust, aromatic flavor.

Ginger (2 tsp, crushed): Crushed ginger adds warmth and a hint of spice to the dish.

Soy Sauce (1/4 cup): Soy sauce adds savory umami flavor and saltiness to the dish.

Avocado Oil (1 tbsp): Avocado oil has a high smoke point, making it suitable for high-heat cooking, and adds a subtle flavor.

Honey (2 tbsp): Honey adds sweetness to the citrus glaze, balancing out the tanginess of the orange and lemon juices.

Fresh Squeezed Orange Juice (1/2 cup, about 2 oranges): Freshly squeezed orange juice provides a bright, citrusy flavor to the glaze. It’s rich in vitamin C and adds natural sweetness to the dish.

Fresh Lemon Juice (2 tbsp, about one lemon): Fresh lemon juice contributes acidity and tanginess to the glazee.

Crushed Red Pepper Flakes (1 tsp): Crushed red pepper flakes add a subtle heat and complexity to the dish.

Cornstarch (1 tbsp): Cornstarch is used as a thickening agent for the citrus glaze.

Instructions

Begin by chopping all veggies into bite-sized pieces, I use a vegetable chopper to cut down on time.

Heat a large pan over medium heat.

Add chopped veggies to the pan and cook until they begin to soften. Then, remove them from the pan and set aside.

In the same pan, cook the ground chicken until fully cooked.

Meanwhile, in a separate bowl, combine minced garlic, crushed ginger, soy sauce, avocado oil, honey, freshly squeezed orange juice, lemon juice, and crushed red pepper flakes.

Once the chicken is cooked through, add the cooked veggies back to the pan.

Pour the citrus sauce over the chicken and veggies, stirring to coat evenly.

To thicken the sauce, add cornstarch and cook until desired consistency is reached.

Serve the citrus glazed chicken and veggies warm over a bed of rice.

Ingredients

  • 1 lb ground chicken

  • 3 medium zucchini

  • 2 red bell peppers

  • 1 white onion

  • 1 clove of minced garlic

  • 2 tsp crushed ginger

  • 1/4 cup soy sauce

  • 1 tbsp avocado oil

  • 2 tbsp honey

  • 1/2 cup fresh squeezed orange juice (about 2 oranges)

  • 2 tbsp fresh lemon juice (about one lemon)

  • 1 tsp crushed red pepper flakes

  • 1 tbsp cornstarch

Directions

  • Chop all veggies into bite sized pieces – I use the Amazon vegetable chopper to simplify my life
  • Heat a pan over medium heat
  • Add all veggies to the pan and cook until vegetables begin to soften
  • Remove veggies and cook ground chicken
  • While chicken is cooking, in a separate bowl combine garlic, ginger, soy sauce, avocado oil, honey, juiced oranges & lemon and crushed red pepper
  • Once chicken is fully cook, add veggies back to pan
  • Pour sauce over chicken and veggies and stir
  • After sauce is combined, add cornstarch and cook to thicken.
  • Serve warm over a bed of rice
