Chocolate Date Bark

Introducing a delightful summertime treat that’s as easy to make as it is delicious: my go-to chocolate date bark recipe! Full credit for this gem goes to my sister, who graciously shared it with me. What makes this recipe so perfect? Well, it’s incredibly simple and doesn’t demand much of your time. Plus, the convenience factor is off the charts – you can whip it up ahead of time and stash it in the freezer. All you’ll need is a handful of ingredients: chocolate chips, peanut butter, roasted cashews, and fresh dates. Trust me, once you try it, you’ll be hooked!

Dates (8-10): These are foundation of our dessert. Dates offer natural sweetness and a delightful chewiness to the mix. Packed with fiber, each cup of dates is about 12 grams of fiber.

Peanut Butter (1/3 cup): Ah, peanut butter, the beloved ingredient that needs no introduction! Peanut butter lends a creamy texture and a nutty depth of flavor to our dessert. Plus, it’s the perfect complement to chocolate, creating a combination that’s hard to resist.

Chocolate Chips (1/3 cup): What’s a dessert without chocolate? These bring a rich, indulgent sweetness to the table. Whether you opt for dark or milk chocolate, their melt-in-your-mouth goodness is sure to elevate this recipe.

Roasted Cashews (1/4 cup): Crunchy, buttery, and oh-so-satisfying, roasted cashews add a delightful contrast of texture to our dessert. They provide a nutty flavor and a satisfying crunch with every bite.


Prepare the Dates: Start by cutting the dates in half and removing the pits. Place them on a cookie sheet, cut side down, and arrange them evenly. Using a cup or the back of a spoon, gently press down on the dates to flatten them, creating a crust-like base for our dessert.

Melt Peanut Butter and Create the Base: In a microwave-safe bowl, melt 1/3 cup of peanut butter until smooth and creamy. Pour the melted peanut butter evenly over the flattened dates, covering them entirely.

Sprinkle Chopped Nuts: Next, sprinkle 1/4 cup of chopped nuts over the melted peanut butter layer. Whether you prefer cashews, almonds, or any other nut variety, their crunchy texture will add a delightful contrast to our dessert. Ensure the nuts are evenly distributed.

Freeze Until Firm: Transfer the cookie sheet to the freezer and allow the peanut butter and nut layer to harden for about 30 minutes to an hour. This will ensure that our dessert sets properly before adding the final chocolate layer.

Melt Chocolate and Add the Final Touch: Melt the chocolate chips until smooth and glossy. Once the peanut butter layer is firm, pour the melted chocolate over the top, covering the entire surface evenly.

Final Freeze and Enjoy: Return the cookie sheet to the freezer and allow the chocolate layer to harden completely, typically for another 30 minutes to an hour. Once hardened, our frozen chocolate date bark dessert is ready to be enjoyed! Slice it into bite-sized pieces and savor the irresistible combination of sweet dates, creamy peanut butter, crunchy nuts, and rich chocolate.

Prep time




  • 8-10 dates

  • 1/3 cup peanut butter

  • 1/3 cup chocolate chips

  • 1/4 cup roasted cashews


  • Cut the dates in half and remove pit
  • Place them on the cookie sheet cut side down
  • Use a cup to press the the dates flat – kind of creating a crust
  • Melt pb and pour over date crust
  • Sprinkle chopped nuts on melted pb and put in freezer
  • Melt chocolate
  • When pb is hardened, pour melted chocolate over the top
  • Place back in freezer and enjoy when chocolate is hardened
