Broccoli: Begin with 6 cups of freshly chopped broccoli, adding nutrients like vitamin C and fiber.

Chicken Thighs: Opt for 4 boneless, skinless chicken thighs, providing a protein source to support muscle repair and growth.

Avocado Oil: a perfect base for roasting.

Salt: Carefully seasoning the dish to balance the taste profile.

Lemon Juice: Adding a tangy brightness to the dish.

Honey: Add a touch of natural sweetness.

Dijon Mustard: Contributes to the flavor profile of the sauce.

Dried Oregano: This savory herbal complements the other ingredients in this dish. 

Pasta: Complete the chicken broccoli bake dish with pasta, whether it’s penne, fusilli, or your favorite variety, providing a base for the flavorful chicken and broccoli.


Preheat your oven to a toasty 375 degrees Fahrenheit

Spread the chopped broccoli evenly in a casserole dish.

Arrange the boneless, skinless chicken thighs on top of the broccoli bed.

Drizzle 1 teaspoon of avocado oil over the chicken, followed by a sprinkle of salt and oregano, adjusting to taste preferences.

Pop the casserole dish into the preheated oven and let it bake for 45 minutes.

While the chicken and broccoli are cooking, cook the pasta according to the instructions on the box, then drain and set aside.

Juice the lemons. In a bowl, combine the freshly squeezed lemon juice, remaining teaspoon of avocado oil, oregano, honey, and dijon mustard, creating a lemon sauce.

When the chicken is golden and cooked through, remove the casserole dish from the oven and add the cooked pasta to the mix.

Pour the lemon sauce over the chicken, broccoli, pasta and mix

Return the dish to the oven for an additional 5 minutes to meld the flavors.

Sprinkle on a touch more oregano and the optional parmesan cheese, serve warm and enjoy.

  • 6 cups chopped broccoli

  • 4 boneless skinless chicken thighs

  • 2 tsp avocado oil

  • 1 tsp salt

  • 1/4 cup lemon juice (about 2 lemons)

  • 1 tbsp honey

  • 2 tbsp white wine vinegar

  • 1 tsp dijon mustard

  • 2 tsp dried oregano

  • 2 cups uncooked pasta


  • Preheat oven to 375
  • Place chopped broccoli in a casserole dish
  • Evenly space chicken thighs in dish
  • Drizzle with 1 tsp of avocado oil, 1 tsp of salt and 1 tsp of oregano, more if desired
  • Place in oven for 45 minutes
  • While chicken is cooking, cook pasta according to box instructions
  • Drain and set aside
  • Juice lemons
  • In a bowl, combine lemon juice, 1 tsp avocado oil, 1 tsp oregano, vinegar, honey and mustard
  • Once chicken is done cooking, remove from oven
  • Add pasta to casserole dish
  • Pour lemon sauce over ingredients in the casserole dish
  • Place back in oven for additional 5 minutes
  • Remove and top with additional oregano and Parmesan cheese
  • Serve warm and enjoy!
