Baked Blueberry Oatmeal

Today we are making baked blueberry oatmeal, a wholesome and delightful breakfast option that’s both nourishing and satisfying. This recipe combines simple yet nutritious ingredients to create a dish that’s bursting with flavor. Baked Blueberry Oatmeal


½ cup oats: Rolled oats provide a base for our oatmeal bake, offering fiber, protein, and vitamins and minerals.

1 cup unsweetened almond milk: Almond milk adds creaminess to the dish without the need for dairy.

1 scoop plant-based protein powder (such as Now Foods): Adding protein powder not only boosts the protein content of the oatmeal but helps keep you feeling full and satisfied.

1 tsp baking powder: Baking powder helps the oatmeal bake rise and become light and fluffy during baking.

1 tsp cinnamon: Cinnamon adds warmth and a hint of spice to the dish, enhancing its flavor profile.

1 tsp vanilla extract: Vanilla extract lends a subtle sweetness and aroma.

1 tsp maple syrup: Maple syrup adds a touch of sweetness to the oatmeal bake.

1 cup blueberries: Fresh or frozen blueberries are the star of this dish, bursting with juicy sweetness and providing a pop of color and flavor in every bite.


Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it’s ready for baking.

Blend Ingredients: In a blender, combine oats, almond milk, plant-based protein powder, baking powder, cinnamon, vanilla extract, and maple syrup. Blend on high speed until all ingredients are smooth and well combined.

Prepare Baking Dish: Pour the blended mixture into an oven-safe dish, ensuring it’s evenly distributed.

Add Blueberries: Scatter about half of the blueberries evenly over the top of the oatmeal mixture in the dish.

Bake: Place the dish in the preheated oven and bake for 15-20 minutes, or until the oatmeal is set and slightly golden on top.

Add Toppings: Once baked, remove the oatmeal bake from the oven and top it with the remaining blueberries. Feel free to add additional toppings such as peanut butter or a sprinkle of granola for extra flavor and texture.

  • ½ cup oats

  • 1 cup unsweetened almond milk

  • 1 scoop plant based protein powder – I used Now Foods

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1 tsp maple syrup

  • 1 cup blueberries


  • Preheat the oven to 350 degrees
  • Combine all ingredients (except the blueberries) in a blender
  • Blend on high until all ingredients are smooth
  • Pour ingredients into an oven safe dish
  • Add in about half the blueberries
  • Bake for 15-20 minutes
  • Top with additional blueberries
  • Optional toppings: peanut butter, granola
  • Serve warm and enjoy!
